I love Caprese salad in a warm summer day. It so refreshing and light and always leaves you wishing there was more. At least I do!
I have created a version of it that with the addition of only a couple ingredients, it makes it out of this world !!! All of my favorite ingredients together in one place. Every time I make it, it is gone within minutes and always have people asking for the recipe. So here it is for you! I hope you like it as much as I do!
You will need:
1 and 1/2 to 2 avocados diced to about 1/2 inch
1 package of medium size tomatoes on the vine, or about 4 roma tomatoes diced about 1/2 inch
4 oz of fresh mozzarella diced about 1/2 inch
Fresh Basil
1 Tbsp balsamic vinegar
1 Tbsp + 1/2 tsp of extra virging olive oil
1/2 cup of diced cucumber to 1/2 inch
Grilled chicken ( only if you want to make it a main dish) cut in small strips
Steps:
1. Chiffonade the basil. Stack a few leaves of basil and roll them into a little bundle and cut into thin strips.
2. Mix all your ingredients in the bowl.
3. Add oil and vinegar.
4. Add salt and pepper to taste.
It is so amazingly delicious, you will want to lick the bowl!!
If you want to make it as a main dish, add some chicken. If you want to make it as an appetizer for a party, cut some good french bread drizzled with oil and lightly toasted and put it on the side for people to make it like a bruschetta, just don’t put the tomato mixture on the bread ahead of time or it might be all soggy. It will be a hit for sure!! Or make it just like a salad the way it is. Either way you make it, I hope that you enjoy it!!

This was GREAT!!! I started reading, and thought “THESE are all MY favorite things TOO” so I stopped at the farmer’s market on the way home. Since we are staying with family while in the States, I don’t do a lot of cooking, so I used a rotisserie chicken from the grocery store to plump this up for a main course
